Pop Creamy Pasta With Spinach

If your sauce still requires some thickening after adding pasta water, try mixing in a bit of flour or potato starch!

Ingredients

4 leaf
Basil
30 ml
Milk
30 gr.
Mozzarella
1 tbsp
Olive Oil
30 gr.
Parmesan Cheese
1 tbsp
Parsley
70 gr.
Pasta
25 ml
Sour Cream
110 gr.
Spinach
0.5 tsp
Thyme
15 gr.
Walnuts

Prep

  1. Grate or slice your Mozzarella, Parmesan Cheese.
  2. Finely chop your basil and parsley.

Heating Steps

  1. Toast walnuts on a hot and dry pan for a few minutes. Then remove from pan and set aside to use as a topping later.
  2. Boil the pasta according to the instructions on the package and save 100 ml of the water when draining.
  3. Heat olive oil in a pan and add Spinach, thyme and fry for 5 minutes, stirring occasionally.
  4. Lower the heat, add milk and sour cream to your pan and mix.
  5. Add the reserved water from the pasta to your frying pan and bring to a simmer until thickened. Add salt and pepper to taste.

Finishing Touches

  1. Add your cooked pasta to your pan and mix evenly.
  2. Add Basil, Mozzarella, Parmesan Cheese, Parsley and Walnuts on top.
